Ube Mochi Pancake Recipe

Remember when Trader Joe's made an ube mochi pancake mix and everyone was bored at home and it sold out in days across a lot of its stores? Well maybe it took longer but that's definitely how it felt for me. By the time I jumped on the band wagon a couple weeks later, I was told it won't be available again for another 6 months.
So of course, I had to make my own version. Unlike the original version though, this is not gluten free, since I found that mixing in flour still made for the best texture. I'll also note that I bought nearly 3 lbs of ube powder in the beginning of quarantine so I have what seems like an endless supply. But don't worry, it can be easily bought online. This pancake recipe reminds me of a Filipino ube rice cake sold at Christmas time but takes way less time!
Ingredients
· 1 cup glutinous rice flour
· 1 1/2 teaspoon baking power
· 1/2 cup all purpose flour
· 1/2 cup sugar
· 1/2 cup dehydrated ube powder
· 1 egg
· 3/4 cup water
Instructions
In a bowl, mix together dry ingredients.
Add in the egg and water, mixing well to incorporate all ingredients together. The batter should be thick.
Cook the pancakes over medium heat on a non-stick skillet or griddle.
Pancakes are ready to flip when bubbles start appearing around the edge. Note: this batter cooks a lot faster than regular pancakes and will take about 45-60 seconds each side.
